Use the Excluded Courts column and remove checkmarks from courts you don't want used. The Daily Planner will then only schedule that event on courts that are still checked.
The Manage Event Court Counts & Start Times screen gives you per-event control over how many courts each event uses, which specific courts it's scheduled on, and what time it starts. It also lets you send start time emails to all players directly from this screen.
From your tournament, open the 3-line menu and select Manage Event Court Counts & Start Times. All events are listed with team counts and venue assignments.
By default, each event uses the maximum number of courts needed for its bracket size. To reduce the number of courts an event is allowed to use:

This feature also works with player score entry. You can designate specific courts for an event and still use the player scoring feature — matches will be automatically assigned to only the designated courts.
If you already know your start times, enter them directly here for each event. Once finalized, click Save, then use the Send Start Time Emails button at the top of the page to email each player their event start time.
RecommendedIf you're not certain of your start times yet, use the Simulator (before verification) or Daily Planner (after verification) to plan your schedule first. Setting start times without running the planner can result in scheduling conflicts.
